Andalusian gazpacho. It is clear that in summer there is nothing like a good soup or cold cream and, without a doubt, in our opinion the best are gazpachos. These can be made with different recipes such as beet gazpacho, strawberries, watermelon, melon, etc … But the one that we leave you this time is the Andalusian gazpacho of a lifetime, yes, with some nuances, since it is an Andalusian gazpacho to our liking, therefore the proportions are the ones we use in our kitchen.
Andalusian gazpacho recipe
At home, we try to take care of ourselves and eat bread in a controlled way, much better if it is integral. So our Andalusian gazpacho does not have bread. If you want to add it later, we recommend that you soak it for a little while before and that you listen to it well before adding it to your Andalusian gazpacho. Andalusian gazpacho elaboration
First we wash the tomatoes, the pepper and the cucumber well. We peel the cucumber, garlic and onion. To make the garnish of our gazpacho, we are going to reserve a piece of onion, cucumber and pepper.
The rest of the vegetables are cut into pieces of the size that you like the most (if they are small, it costs less to crush them) and we put them in the blender glass with the salt to taste of each one, the vinegar, the oil, the cumin and we crush everything until we obtain a smooth cream. Now we just have to add the water, although, in the ingredients, we indicate a liter. This varies a little depending on each one. The ideal would be to try it and when the gazpacho is to your liking, stop adding water. If you finally decide to put bread on it, you will probably have to increase the amount of water a little.
It goes without saying that Andalusian gazpacho must be served very cold, so it should be left in the refrigerator for at least a couple of hours before serving.
Finally, we serve it accompanied by chopped vegetables and if you fancy some croutons and you are ready to taste a delicious Andalusian gazpacho.
The measurement that we mention in oil and vinegar is small cups of coffee. The measure that we cite for cumin is that of a teaspoon.
